The Mediterranean is a sapphire
blue sea of water encircled
by a number of countries that share a similar climate but
different cultures. Food-wise,
there are three general culinary regions: North African (Morocco),
Eastern Mediterranean (Greece, Israel, Syria, Turkey, Egypt,
Lebanon) and Southern European (Italy, France, Spain). Although
Mediterranean dishes and cooking styles are all different,
there are some threads of similarity whereby knowing one helps
with understanding the rest. This stems from their sharing
of climate and the intense historical trade and movement between
communities.
Wines, herbs and spices are used generously and yet intricately
in Mediterranean food, varying according to region and cultural
practice, but flavours are always clear and hearty, even bold.

produce, vegetables play a significant role in Mediterranean
cooking. From fragrant olive oil to ripe tomatoes, fresh eggplants,
peppers, squashes, mushrooms, onions, garlic, artichokes,
lentils, legumes, eggs and dairy, the list of healthful ingredients
used in Mediterranean cooking is long and colourful.
